Harlow!

Greetings to all! :) Sorry for not updating my blog and replying to emails. I'm still in E midst of unpacking. My oven is already here but I don't have a single baking tray :P The rest of my stuffs gonna be here on Friday. My mom never failed to haunt me with the fact that I have about 4-5 boxes of baking stuffs and the same number of boxes for books! :p

Anyways, I would not be able to bake for leisure as yet coz I have to bake a gigantic batch of cookies for wedding favors. Nevertheless, I'm sure Im gonna squeeze in some time to try something new. I doubt I can restrain from leisure baking for an entire month! I'm well behaved most of the time but there is also a little rebel inside me...*grin sheepishly*

I promise I'll reply to emails and requests for recipes soon. I'll be back soon...with more goodies from my new kitchen...Till then! :)

As cool as a cucumber


This is a favourite at home...esp when it's eaten with curries, chapatis, nasi briyani...etc2. It's awesome with fried chicken wings too! It's a simple version of Acar Timun actually. I usually add strips of carrot too. I had none in the fridge, so I had to omit it.
Ingredients:
2 Cucumbers - Washed, remove centers and cut into 2.5cm strips.
1 Green chili - sliced
1 Red chili - sliced
5 shallots - halved
5 garlic - halved
Chopped mint/coriander leaves
Salt
3-4 tbsp Vinegar
1.5-2tbsp Sugar
Method:
Mix everything in a bowl. Keep it in the fridge for at least 30 mins or more so that the flavours combine well.
This keeps well up to 3 days in the fridge.
*Use bird's eye chili instead if you like it hot.
